Avocado and Tomato Boats

A few nights ago I had pulled out chicken for dinner, but didn’t have anything to go with it. Enter: avocado and tomato goodness. A little Italian, a lotta veggie, warm and wintery or a perfectly summery. Best of all, it takes very little time to prepare, and can even be made in advance. Serves 2 (easily doubles as needed).

What you’ll need:
1 avocado, halved, pitted, and skin removed
1/4 cup chopped red onion
1/3 cup chopped tomatoes
1 tbsp chopped parsley
1 tsp dried oregano
1 tbsp olive oil
1/2 tbsp balsamic vinegar
1/4 cup feta cheese

How to make it:
1. Combine red onion, tomatoes, parsley, oregano, olive oil, and balsamic vinegar.
2. Add feta cheese and stir to combine. At this point, you can stick the mixture in the fridge to marinate if making ahead of time.
3. Fill each half of the avocado with half of the tomato mixture. Serve and enjoy!
