Healthy Italian Winter Stew

Let me start by saying we wore shorts and t-shirts on Christmas Day here in Atlanta. So this week when it got chilly (hey, the 30’s aren’t warm, right?), I pulled out all the cold weather foods I could think of. This winter stew was one of them, and so yummy. Bonus points for being quick to make, since we spent part of our evening at the gym. Try this wholesome meal on your next cold winter night and tell me what you think!


What you’ll need:
1 lb. lean ground beef or turkey
1 can white beans, like Great Northern or Cannellini, drained and rinsed
1 can diced tomatoes with Italian seasonings
2 cloves garlic, minced
1 tsp oregano
1 cup reduced sodium chicken or veggie broth
2-3 cups of spinach

How to make it:
1. Brown meat in large skillet over medium heat. Drain.
2. Add beans, tomatoes, garlic, oregano, and broth. Simmer 10 minutes, stirring occasionally.
3. Add spinach and continue to simmer and stir until slightly wilted, 2-3 minutes.

Serve over brown rice, quinoa, or pasta. Sprinkle with Parmesan cheese. Enjoy!

PS- It’s been a while since my last post. My husband and I are volunteer-raising a guide dog puppy with the Guide Dog Foundation. Sonny came to us December 11th at 4 months old and has been quite the handful! In the last week he’s starting to show real progress around the house and doesn’t need a (completely) constant eye. We are so proud of his progress so far!
