A summer salad is a strange thing to post in November, but strawberries are still on sale at Publix, so it’s still finding its way into our lives. I’m not a huge fan of salads. The leaves, really. I’m all about toppings. So for me, the more the better! This recipe is simple, light, and flavorful- a wonderful lunch or addition to dinner.
What you’ll need:
5(ish) oz. baby spinach
1 cup chopped strawberries
1/2 cup thinly sliced red onion
1.5 tbsp olive oil
1.5 tbsp balsamic vinegar
1/2 tsp minced garlic
How to make it:
1. Mix spinach, strawberries, and onions together.
2. In a small glass or dish, mix oil, vinegar, and garlic.
3. Pour dressing over top of salad. Enjoy!
