Guys, I am so excited about this one. Delicious is an understatement. Plus, it’s super healthy and filling. I would high-five this creation if it had hands.
What you’ll need:
1 cup quinoa
1 3/4 cup water
1/4 cup chopped red onion
6 cherry tomatoes, halved
1 tbsp extra virgin olive oil
1 poached egg (instructions below*)
1/8-1/4 cup fresh basil, chopped
1/4 cup feta cheese
How to make it:
1. Add quinoa and water to a small pot and bring to a boil. Reduce heat to low, cover, and simmer about 10 minutes, or until water is absorbed.
2. Add half of your cooked quinoa, plus olive oil, tomatoes, onions, basil, and feta to a bowl. Top it off with the poached egg*.
3. Mix and ENJOY!
*Make a poached egg: Bring a pot of water to a boil. Add 1 tbsp vinegar and crack egg gently into water. Boil egg for two minutes. Remove. Eat. Love.
