What better excuse to make dessert than Pi Day? It’s a big deal.
Normally I make this healthier Peanut Butter Pie, but since my husband is out of town (his loss), dessert is coming with me to work (lucky coworkers). That means something that doesn’t need to be refrigerated.
Enter… Apple Pie Cupcakes. This recipe was a delicious find! I made my own apple filling (from the same link, as opposed to using canned pie filling). With no ingredients for frosting, and no cans of whipped cream (wonder where those went?), I decided to use a cinnamon icing instead.
1 cup powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
Mix thoroughly and drizzle over the top of your completed cupcakes for a sticky sweet treat.
