I buy the bags of single serving fish at Sam’s Club whenever we go. They are so easy to take out and don’t involve guessing serving size. Last night, that, in Tilapia form, was what’s for dinner.
After placing the fish in the pan on the stove, spread a teaspoon of olive oil mayo and a teaspoon of Chobani plain Greek yogurt (sour cream works, too) over each piece of fish. Sprinkle some Parmesan cheese and basil over top and flip to coat the other side the same way. Turn to medium heat (I turned the heat on right after I flipped, as I was preparing the second side). Cook 3-4 minutes on each side.
I cut up some avocado on the side of ours. It would taste very yummy over some brown rice, too.
